Chef Bill Kim is dishing out Detroit-style pizza in Wicker Park

The new virtual restaurant opens on February 3.

Last month, when we named 2020 the Year of Pizza in Chicago, we introduced you to Chef Bill Kim's Pizza & Parm Shop, a virtual restaurant serving Detroit-style pies in Oak Brook. Us city-dwellers will finally get a taste of the concept when Kim opens a second virtual location at his Wicker Park restaurant, Urbanbelly.

The pop-up, which operates exclusively through DoorDash, will debut on Wednesday, February 3. Diners can expect three Detroit-style pan pizzas on the menu—ricotta and arugula; double-smoked pork and pineapple; and Korean BBQ ground beef with kimchi—plus the option to build their own pie from a list of toppings. There are also saucy cauliflower "wings" and a pair of marinara-dipped parm sandwiches.

Though Kim was born in South Korea, he and his family immigrated to Chicago when he was 7 years old. Growing up, Kim says that his North Side upbringing was a crash course in Italian cuisine. Kim went on to study at Kendall College before opening beloved Asian restaurant Urbanbelly as well as the now-shuttered Belly Shack and BellyQ; he also operates a kitchen at Time Out Market Chicago, which is currently hibernating.

Kim says that Detroit-style pizza is a happy compromise between Chicago's rival styles: thin crust and deep dish. Plus, it offers a vehicle for some original flavor combinations that you can't find anywhere else in Chicago.

"I had a lot of fun building this menu with flavors I love but that you wouldn’t necessarily expect on a pizza," Kim says in a press release about the takeout-only concept. "This menu pays homage to my childhood and reflects the many different cultural influences in my life that are evocative of the diversity in Chicago."

Chef Bill Kim's Pizza & Parm Shop will begin offering takeout from Urbanbelly in Wicker Park starting on February 3; orders can be placed Wednesday through Sunday from 11am to 9pm.
