Enjoy farm-to-table vegan delights at Zagreb’s Zrno Bio Bistro

The certified 100% vegan and organic eatery is a true farm-to-table story, right in the heart of Zagreb

You might be forgiven for assuming that Zrno Bio Bistro is like many organic eateries, boasting locally sourced produce and sustainability practices, but falling short on their promises. But Zrno Bio Bistro is a different story: a restaurant that arose out of Croatia’s oldest organic farm.

Zrno farm is located some 60km outside the capital, in the small village of Habjanovac. It began operations over 30 years ago and from the beginning has been dedicated to an entirely animal-free and organic agricultural philosophy. No synthetic pesticides or herbicides are used, and they steer well clear of artificial fertilisers. A firm belief in a holistic and sustainable approach keeps them in control of the entire production cycle, with the farm yielding more than 40 different kinds of vegetables, fruits and legumes.

In 2012, Zrno opened its own artisanal bakery right on the farm where a range of vegan pastries and sourdough breads are sold, alongside sandwiches made entirely from their own produce.

Expanding this idea, Zagreb’s Zrno Bio Bistro was opened in the centre of town. As well as guaranteeing the freshness of each dish with daily deliveries of ingredients from the farm, it is Croatia’s first and only certified 100% vegan and organic restaurant, making it unique among its competitors. 

Visitors can enjoy a varied and enticing menu, including a daily soup made entirely from Zrno’s own ingredients. Other tasty highlights include gomoku, a bowl of sautéed brown rice and vegetables with tofu and seitan, both farm-made; and the warm kayu sandwich, where a choice of tofu or seitan with wok vegetables, sweet potato fries and homemade tomato sauce are delicately packed into artisanal kayu bread.

Aside from its one-of-a-kind story, the restaurant is cosy and inviting, with a light interior and lush green plants hanging from the walls behind the counter. The green-conscious visitor to Zagreb need look no further for delicious local flavours.
