New York’s beloved Thai eatery, Fish Cheeks, is going South. Slated to open in Wynwood in late February 2027, the concept is opening its first location outside New York City, and Miami is the lucky destination.
Founded in 2016 by 55 Hospitality duo Jennifer Saesue and Chat Suansilphong, Fish Cheeks famously debuted in NoHo with "no pad Thai in sight," introducing diners to bold, seafood-centric regional flavors before expanding to Williamsburg in 2025. Now, fresh off celebrating a decade of convivial, family-style dining, the restaurant is bringing its vibrant coastal cuisine to South Florida.

Under the direction of Executive Chef Dustin Everett, whose extensive culinary background includes Momofuku Ssäm Bar, Pig & Khao and top New Orleans kitchens, the Miami outpost will serve as the most expansive expression of Fish Cheeks to date. Obviously the crew is bringing along the iconic Coconut Crab Curry, and the menu will feature other signatures like the fiery Zabb Wings and whole-fish preparations alongside fresh creations built around locally sourced Florida seafood. Designed to match Miami’s larger-than-life energy, the menu will blend authentic coastal Thai roots with dramatic, grander presentations tailored to the local palate.
The physical space is also set to make a splash. Designed by Space NY, the sprawling restaurant will mix traditional Thai architectural elements with the geometry and glamour of Miami Art Deco, all wrapped in the saturated hues and vibrant artistic spirit of Wynwood.
For co-founders Saesue and Suansilphong—both named among Observer’s Most Important People in Nightlife + Dining—Fish Cheeks Miami represents the next evolution of 55 Hospitality, which also includes the critically acclaimed Bangkok Supper Club and allergen-free Bub’s Bakery.
