In a city that's equally famous for its museums and restaurants, it was only a matter of time before someone combined the two. The Museum of Food and Drink will be dedicated to all aspects of food, including its forgotten history and future science. To kick-start this ambitious project, Dave Arnold, director of Culinary Technology at the French Culinary Institute, and Patrick Martins, cofounder of Heritage Foods USA, are putting on a fundraising luncheon of epic proportions at Del Posto. Attendees will be treated to time-warp creations from some of the city's best chefs, each focusing on a different historical period. David Chang (Momofuku) will channel American food circa 1491, Wylie Dufresne (wd~50) will serve his take on caveman grub, and Mark Ladner (Del Posto) will take inspiration from Ancient Rome. Added to that constellation of culinary stars is a troupe of serious mixologists, including Thomas Waugh (Death & Company) and Damon Boelte (Prime Meats).
