Transylvania native Anna Kozma grew up watching her grandmother cook kurtoskalacs, thin sugar-crusted rings of yeast pastry, over an open-flame hearth. She creates her own versions, made with organic milk and eggs, in an electric oven at this Long Island City bakeshop.
