Esora will welcome chef Zaiyu Hasegawa of Michelin-starred restaurant Den for a series of four hands dinners in June. The fine dining hotspot was crowned best restaurant in Japan and third in Asia by World's 50 Best 2019. Well-known for his warm hospitality and earnest nature, Hasegawa also won the chefs' choice award this year, as voted by his peers. At Den, Hasegawa pays homage to his Japanese roots with a kaiseki menu, but international influences can also be found, such as in his 'Den-tucky' fried chicken wings dish, playfully presented in a fast-food takeaway box. Expect a taste of chef Hasegawa's whimsical culinary creations at Esora, which is owned by fellow Japanese chef Shigeru Koizumi. No stranger to the fine dining scene, Koizumi has spent 15 years in some of the world's best kitchens, including the three Michelin-starred Nihonryori RyuGin in Tokyo and two Michelin-starred Odette in Singapore. He abides by the belief that even one degree of temperature difference can affect the outcome of a dish, and this careful attention to detail resonates throughout his cuisine.
