This is Thai cooking shaped by personal history. The kitchen draws directly from the Wongphanlert family farm in Ratchaburi, where turmeric, fingerroot, ginger and other aromatics are grown specifically for use at Nimitr. Farming their own produce ensures freshness and quality, while quietly reducing carbon footprint and supporting local agriculture. More importantly, it gives the menu a sense of grounding that feels increasingly rare in high-rise dining.
The menu encourages diners to choose their own path. You can order a la carte, opt for a four-course set, or dive into a family-style sharing menu designed to showcase flavours from different regions of Thailand. Across all formats, herbs and spices are not used simply for aroma or heat, but for balance, depth and wellbeing.
A strong place to start is miang kham king scallops. This refined interpretation of the classic snack layers crisp betel leaves, lemongrass, coconut and shallots around plump scallops, delivering sweetness, bitterness and freshness in a single bite. It is familiar in spirit, but precise in execution. Another highlight is grilled Thai wagyu beef with chakram leaves salad and duck egg, where briny coastal greens and coconut dressing cut through the richness of the meat.
For those who lean toward deeper, more traditional flavours, the nam prik section is essential. Poo lon, a central Thai chilli relish made with soft-shell crab, coconut and mixed herbs, arrives with local vegetables for dipping and sharing. It is rich, comforting and unapologetically Thai. Soups continue that regional journey, including tom sab kai mod dang pla yang, a north-eastern speciality combining aromatic herbs with crispy red ant eggs and seared tuna for a punchy, savoury broth.
Main courses balance tradition with a light contemporary touch. Gaeng lueng pla salmon reworks a southern yellow curry using salmon and salmon roe, while preserving the sharp heat and herbal complexity that define the dish. Gai yang with ma kham sauce offers a more familiar route, presenting grilled free-range baby chicken glazed with tamarind and Thai condiments for a dish that feels nostalgic and refined.
