Fine dining gets a slightly easier way in at EBBE Bangkok with the new discovery menu. This shorter format lets you get a feel for the kitchen without settling in for the full run – great on the wallet, and the stomach. On the plate, the approach stays the same: ingredient-led and precise, just trimmed into something that works if you are short on time or not quite ready for the longer version. The kitchen is led by chef Ebbe Vollmer, whose background includes time in two Michelin starred kitchens and alongside names like Marco Pierre White and Gordon Ramsay. You are still seated right at the chef’s counter, close enough to follow the flow of the kitchen, which keeps things engaging without feeling formal. It is a good way to try it out, especially if you have been meaning to book but needed a gentler starting point. If you are in the mood to go all in, the longer seasonal prestige menu is there for a more complete experience.

Chef Black brings his Arun breakfast pop-up to Bangkok

Chef Black of Chiang Mai’s Blackitch Artisan Kitchen is bringing Arun – his new breakfast concept, named after the Thai word for dawn – to Bangkok for a four-day pop-up. The menu takes familiar staples including rice, eggs and grilled fish and turns them into a customisable set. Each set comes with northern Thai rice, an organic pasture-raised egg from Chiang Mai, 200g portion of grilled fish, soup, three kinds of pickles, two types of nam prik, freshly shaved dried bonito, premium seaweed and tea. Fish takes top billing: diners choose the variety when booking, then select their rice, soup, grilling style and hot or iced tea at the table.  The Daily Fish Set costs B1,390++, while the Premium Fish Set is B1,690++. Fish varieties are subject to availability. August 16 at noon and 6pm; August 17-19 at 10am and 6pm. Limited to 18 seats per session. EBBE, LG/F, Erawan Bangkok
