KŌKULABO opens at Siam Pathumwan House with a modern izakaya concept that blends Japanese tradition with a contemporary approach. The idea centres on kōku – the lingering depth and complexity that defines great food – with traditional dishes reworked through careful technique and thoughtful ingredients.
Chef Run (Wacharun Imarramsak) leads the kitchen after more than two decades working with Japanese cuisine, including 15 years heading a private sushi restaurant. His menu moves between izakaya comfort and small creative twists, with highlights including olive salmon marinated overnight in soy and olive oil, cumin-spiced ebi karaage and the ‘crunch roll’ filled with crispy rice, seafood and black pepper mayo.
The drinks programme is equally considered with a strong focus on Japanese whiskies, sake and highballs alongside cocktails like the Umami Spritz, which combines Japanese gin, sparkling sake and kombu with bright tomato notes.
