If you love fish, chances are you’ve heard of Pla Dee Preeda in Nonthaburi. Famous for its clever take on fish dishes, head chef Phusit Hemwihok has perfected the art of serving mains that are completely boneless and free of any fishy smell. Now, you don’t even have to travel far to taste his creations as he’s teamed up with Ruay Mitr, the popular Thai-Chinese boiled rice spot, to create khao mun pla dee, also called fish butter rice. This inventive creation brings the signature flavours of Pla Dee Preeda to life, reimagined through Ruay Mitr’s lens. The highlight of the dish is dry-aged ang gui, a prized sea fish celebrated for its firm yet tender texture and rich aroma, which is further enhanced by careful dry-ageing techniques. Served sizzling in a stone pot, it comes with grilled fish bone broth and a special house-made sauce. Limited to just 10 servings per day, the set includes boneless grilled fish soup, a seafood sauce and a sweet fish sauce. For a snack, you can also try the delicate ang gui fish spring rolls.
