After years working behind the scenes at some of Bangkok’s most talked-about Thai restaurants, chef Saki Hoshino steps into a space of her own with SAAT, located near Hua Lamphong. This is where she explores Thai flavours through her own lens, drawing on more than a decade of cooking in Thailand and working closely with Thai ingredients. The menu moves comfortably between savoury plates and desserts, often starting with familiar Thai ideas before nudging them somewhere new. 

A corn and miso tart takes inspiration from the classic street snack khao pod kluk butter, balancing sweet corn with the savoury depth of miso. Other dishes lean playful but precise, including grilled hamburg crepes, fresh noodle salads with herbs and bonito, as well as a rich crab curry served with crisp flatbread.

Desserts are where the kitchen really stretches the imagination. Thai chocolate meets fermented soy in a rich fondant, while coconut pancakes arrive with coconut sugar ice cream and toasted mung bean powder. Throughout the menu, Thai ingredients lead the conversation, interpreted with technique but still grounded in flavours people recognise.
