Hot Doug's founder Doug Sohn is making beef jerky

When Doug Sohn closed his beloved sausage stand Hot Doug's in 2014, we expected that his culinary vision would continue to manifest itself in the form of pop-up events and one-off collaborations. But we never expected that Sohn would get into the beef jerky business.

Today, Chicago-based Think Jerky revealed that Sohn has collaborated with the company to create a jerky that “combines savory beef with a hint of black pepper for a modern twist on a classic.” The jerky can be ordered via Think Jerky's website and will ship in February 2017—it will show up in stores (including Starbucks and Mariano's) in April 2017. 

Launched via a Kickstarter campaign, Think Jerky is the brainchild of Highland Park native Ricky Hirsch, who has enlisted Chicago chefs such as Matt Troost and Gale Gand to come up with unique jerky recipes. According to its website, Think Jerky products use grass-fed beef and free-range turkey, with 10 percent of profits from sales of the products going to the David Lynch Foundation.

While we're a little disappointed that Sohn's jerky recipe doesn't involve celery salt, mustard or neon green relish, we'll probably pick up a bag to tide us over until the Hot Doug's stand in Wrigley Field reopens this spring.
