Don't expect the run-of-the-mill unagi dishes when you dine at the authentic Japanese restaurant this month. Dedicating July to the freshwater eel, Chef Minami explores different cooking styles and has created an innovative array of specialty delights such as unatama don (caramelised grilled unagi served with rice), unagi chawan mushi (steamed egg custard containing pieces of unagi), umaki tamago (thick egg omelette rolls stuffed with marinated unagi), unagi yanagawa nabe (a casserole of unagi slices and fresh Burdock roots simmered together in a clay pot) and unagi shirayaki yuzukosho (juicy cuts of unagi seasoned with the house citrus sauce).
