For the first time, Hennessy’s annual dinner event is open to public. This year’s edition, named Hennessy XO Odyssey, sees local chef James Won of enfin by James Won being paired with Chef Nurdin Topham from the UK to create a multi-course cognac-pairing menu to highlight the different tasting notes of the Hennessy XO.
Chef Nurdin (founder of the one-Michelin-starred NUR in Hong Kong) is no stranger to the field-to-table foraging concept; he once worked in the Nordic Food Lab set up by renowned chef René Redzepi of Noma. Together with James Won, Chef Nurdin will create a menu that explores the fresh, abundant produce of Sabah.
