At East LA's authentic Yucatecan haunt Chichen Itza, celebrated chef Gilberto Cetina reveals the secrets behind his vaporcito de pollo—banana-leaf-wrapped, Yucatàn-style tamales. Learn how to make the holiday dish with hands-on instruction, followed by a four-course meal that includes the tamales, atole de pepitas (pumpkin seed porridge), brazo de reina (rolled tamales with chaya) and tobijoloch (sweet, green corn tamales). A limited class of 20 people allows for one-on-one instruction, so expect to take in the whole tamale.
