You used to need to fly to Oahu's North Shore to try Ry's Poke Shack—the poke shop Netflix made famous on Street Food USA. Now you just need to wait in line. The Hawaiian transplant has locations in Huntington Beach and Pasadena, both serving made-to-order poke with fish flown in from the island five days a week. All you really want from poke is ultra-fresh fish and solid rice, and Ry's excels on both counts. There's salmon, but you're here for the ahi, which gets various treatments. I like the classic shoyu, the gingachurri (think a gingery chimichurri) and the garlicky, gently spicy Lao style. You could go for the Mayjah bowl, which gets you two poke styles, but if variety is what you're after, the way to play is to get poke by the pound—a quarter-pound of each style you want to try, with a side of rice. If you're in the South Bay or on the Westside and don't want to make the drive, you can stop by the newly opened Ry's Fish Market in Lomita—though be warned: the poke there is scooped out of the display case, not made to order like in Huntington Beach or Pasadena.
