They say the secret is in the sauce, but for Simon Jodoin-Bouchard, it also lies in flavour combinations, texture, and execution. He is proof that smash burgers are not just a trend.

Simon was trained in the American style of Barbecue. He studied all the classics and subtleties of fast food to create a unique product, reflecting his personality and remaining faithful to countless recipe tests.

"Everything I create results in a flavour explosion in the mouth. I look for ingredients that assert themselves on the palate, marrying sweet, salty, acidic, umami, without forgetting about texture," says Simon.

His quest for the best smash burger led him to the classic that’s been on his menu since day one. We’re talking about a perfectly smashed 100-gram patty, capicola, a schmear of American cheddar cheese, a few crisp pickles, caramelized onions, Simon’s signature sauce, all wrapped inside "Martin's" pillowy potato buns.

Other burgers also shine on the menu, like the "Big Time Burger" — available  exclusively at Time Out Market Montréal that recalls the flavours of another "Big" burger from a very well-known chain. Then there’s the "T-Town Burger" that channels a sloppy joe topped with a tex-mex and provolone cheese blend (hello jalapenos, chipotle sauce, and southwest), and by popular demand, the famous "Bacon + Bacon Burger", a big favorite of Le Burger Week thanks to the mind-bending house-smoked back bacon and bacon jam.

And we haven’t even talked about the poutine.

If there's another menu item that Simon is particularly proud of it’s an iconic American dish little known in Quebec called chili cheese fries.

Picture a mountain of crispy fries slathered in next-level homemade chili, cheddar cheese, sour cream, a few fresh cilantro leaves, and a drizzle of yellow mustard. "The mustard is optional, but even for someone like me who hates mustard, I can't do without it!"
