Three years ago, Bridget Firtle abandoned a lucrative hedge fund gig to open a 4,000-square-foot East Williamsburg rum distillery at the height of Brooklyn’s small-batch revival. The distillery’s debut Owney’s Rum, a white, unaged spirit cold-fermented for a longer-than-average five days, is the focus of this 25-seat bar offshoot, the Daq Shaq, open to the public every Thursday to Sunday. The counter trades blender-based concoctions for three-ingredient daiquiris and house punches shaken by a cast of veteran barkeeps including Jelani Johnson (Clover Club) and Brian Miller (Slowly Shirley).
