Cocktail heavyweights Steve Olson, Andy Seymour and Leo DeGroff are behind the beverage program at this tequila bar and taqueria in the Hotel on Rivington. The extensive agave-focused drinks list includes 36 tequilas (like Don Julio, Partida and Ocho) and 37 mescals (including Del Maguey and Illegal), plus classic and creative cocktails such as the 212 (reposado tequila, Aperol, grapefruit juice) and the Oaxacan Dream (mescal with pineapple, cranberry and lime juices). Le Bernardin alum John Keller, most recently of Co-Op Food & Drink, created a modern Mexican menu of snacks, including nachos, taquitos and tacos stuffed with fillings like cactus tempura and beer-braised short rib.
