During this weeklong festival, nine French restaurants will offer special sausagecentric menus—head to participating eateries such as Marseille, whose dishes include a sausage tart with crispy sweetbreads ($11.75), and Pigalle, which will cater to pescatarians with a seafood boudin blanc($10.95). Suds enthusiasts can pair the grub with rare large-format beers—such as Chimay Grand Reserve 2010 and Stillwater Stateside Saison—which will be offered by the glass ($6).
