Start the night with a palate-cleansing Zipang sparkling sake while the 105-foot schooner America 2.0 sails into the harbor. While you admire Lady Liberty up close, dine deckside on the toque's creations: nine sushi bites—including a fatty-tuna hamachi—and one roll. Gekkeikan Haiku sake and an apple-scented tipple from Momokawa are paired with the two-course dinner. Sip the final glass, a pink dessert sake from Hana Awaka, as the boat returns to the pier.
