Top Chef champ Harold Dieterle channels his German heritage at this Monday-night Oktoberfest-themed dinner. The four-course menu showcases refined Bavarian-inflected plates. Start the meal with a salad amuse of beet and baby red mustard greens with walnuts and pickled herring. Then dig into brawnier fare, such as bratwurst with potato pancakes and apple compote, and panfried schnitzel with spaetzle, braised red cabbage and potatoes. To finish, satisfy your sweet tooth with a German chocolate cake accompanied by cinnamon ice cream. All dishes are paired with beers from Bavarian brewery Bayerische Staatsbrauerei Weihenstephan, such as the mellow, malty Weihenstephaner Hefeweissbier Dunkel, which comes with dessert.
