Sample three artisan cognacs and three pineaux des charentes (a fortified wine from the Charente region of France) at this lecture and tasting, led by importer Nicolas Palazzi. Cheese pairings, curated by curds importer Seymour Pond, will include aged Parmigiano-Reggiano Stravecchio from Emilia Romagna, paired with Paul-Marie & Fils Pineau des Charentes Vieux 13-year, as well as pecorino fiore sardo (a sheep’s-milk cheese from Sardinia), matched with Navarre Grande Champagne Cognac Veille reserve 50-year. Topics of discussion will include production methods, how age affects flavor and aroma, and what qualifies as artisan cognac.
