The Consorzio del Prosciutto di Parma—which sets worldwide prosciutto guidelines—celebrates its 50th anniversary with a walk-around tasting. Ten top toques—including Reynards' Sean Rembold and Ryan Hardy of Charlie Bird—will battle it out for the title of Prince or Princess of Prosciutto Di Parma. Mission Chinese Food’s Danny Bowien will plate tartine rye with Genovese pesto, prosciutto and sea urchin, while Sara Jenkins from Porsena will serve a crostino with cantaloupe-melon butter and prosciutto. Italy's Vinissimo offers wines from the Emilia-Romagna region, and guests can proudly—and permanently—display their amore for the meaty Italian delicacy, and win a leg of ham, by getting a prosciutto tattoo from Greenpoint's Three Kings Tattoo artists.
