Scotland’s exported plenty of beloved gems throughout the years—Sean Connery, the Proclaimers, Gerard Butler’s abs—but the favorite export is, hands down, Scotch. The spirit gets the pairing treatment at West Village Scottish haunt Highlands, where toque Christopher Rendell will be joined by Michael Smith of renowned Isle of Skye eatery the Three Chimneys for a three-course prix fixe to celebrate Scotland Week 2013. The duo will be dishing up traditional fare with a modern twist: cured trout comes with chopped langoustine salad, piccalilli (pickled vegetables) and cracked wheat brioche; pan-roasted venison is dressed in Scotch broth and parsley sauce; and caramelized chocolate mousse is topped with a whiskey-hazelnut crunch. Each course comes with a dram of Compass Box Scotch, like a soft, fruity Asyla or a sultry, sweet Oak Cross.
