Harness umami—the "fifth taste" beloved by food cognoscenti—at this hands-on demonstration, led by chef-instructor Emily Casey. First, prime your taste buds with a plate of Parmesan cheese, sun-dried tomatoes and roasted mushrooms, seeing if you can identify the common umami element. Next, divide into teams of three or four to prepare umami-rich snacks like cucumber and Marmite tea sandwiches, turkish tomato and walnut dip, and hearty beef stew, to be enjoyed together at the end.
