Hold on a moment before you order a Tsingtao to go with your meal. In Cafe Evergreen’s large, elegant dining room, you are handed a roster of more than 400 wines. So much for the conventional wisdom that wine doesn’t go with Chinese food. Quick but relaxed servers are keen to explain menu options like conch sautéed with fried bean curd or seafood “hermitage”—a love nest of shrimp, scallops, calamari and vegetables.
