The pace is fast at this Flushing favorite, named for a city in China’s Guangdong province; long hours and a vast menu mean that Chao Zhou’s satisfied customers are legion. Pork or clam stock enriches many of the dishes, such as the wonderfully simple minced pork with fresh oysters in a rice soup. The many marinated items are popular as take-out, and include country-style duck soaked and simmered in spiced soy sauce. Stick to the main menu and skip the chef’s suggestions, which don’t always live up to their elevated price.
