Trestle on Tenth chef-owner Ralf Kuettel taps into his childhood in the foothills of the Swiss Alps for this eighth annual porcine dinner. Calling up Switzerland's tradition of nose-to-tail hog preparation, Kuettel's limited-time à la carte menu features dishes utilizing all parts of the animal, such as head cheese with mustard and red cabbage ($9), pork-shoulder crépinette ($12), and a schlactplatte spread of house-ground sausages, braised pork belly, sauerkraut and mashed potatoes ($26). Swiss wines like a white Chasselas ($12) and artisanal beers ($7) are available to pair with those meaty plates.
