Chef Aaron Fitterman (Public) is behind the stove at this 44-seat canteen in the West Village. A candlelit dining room, with whitewashed brick walls and an old church pew, is the setting for modern American dishes such as beer-brined chicken with smashed fingerling potatoes, fennel-crusted pork loin with spaetzle, and grilled tuna with lemon risotto.
