Opening a Turkish restaurant in the heart of Brooklyn’s Chinatown might not seem like the most brilliant business plan, but owner Hasan Ustun hopes to appeal to Turkish families who come to the mosque next door (and, of course, to other fans of Turkish cuisine as well). He brought in a trio of highly specialized Turkish chefs: a grill chef to prepare meats and kebabs, a pizza chef to bake flatbread pizzas like Iahmajun (a spicy mini-pizza topped with ground lamb), and a chef to handle soups and main courses like manti, delicately folded beef dumplings served with yogurt sauce.
