Immigration lawyer Naresh Gehi has discovered a lesser-known perk of the job: His clients are an excellent resource on ethnic cuisine. They came in handy when Gehi decided to take over a midtown curry factory and turn it into an authentic Indian restaurant, Jaipur’s. At the pink-hued eatery (Jaipur is known as India’s “Pink City”), he serves a grab bag of all-star dishes, including chicken achari and the hard-to-find galouti kebab, a dish that was supposedly invented when a toothless Lucknowi nawab (governor) commissioned the creation of something soft and delicately spiced to sink his gums into. If your molars are intact, you might enjoy the tandoor-seared lamb spareribs instead.
