Former advertising exec Elena Scotti sources fresh lobster direct from Northern Maine for her South Street Seaport stall. She stuffs a mix of claws, knuckles and tails into top-split rolls, before dousing it in extra virgin olive oil and a squeeze of lemon juice (The Naked) or gussying it up with parsley and mayo (The Ay Up).
