Dominick Castelverte, a former valet at the original Monte's, revamped that red-sauce stalwart, which operated in this space from 1906 until 2008. He installed a wood-fired oven and an open kitchen, which turns out traditional Italian dishes such as black squid-ink tagliatelle and Neapolitan-style pies.
