Here, chef Giuseppe Bologna (Blue Hill at Stone Barns) will prepare them Milanese-style: Meats will be cut to order on Berkel slicers, and the sandwiches will be toasted, not pressed. Options include one with San Daniele ham, Parmigiano-Reggiano and fennel.
