Chef Fred, who trained under Iron Chef Masaharu Morimoto and sharpened his skills everywhere from Corton to Sushi by Boū, guides the evening with precision. His omakase leans into Japanese technique while weaving in Western influence, offering dishes like Hokkaido scallops brushed with truffle miso or uni crowned with caviar. Each pour of sake is selected to heighten the flavors of the dish it accompanies, creating a rhythm that carries through the entire meal.
