Campania-born Maurizio Crescenzo, chef-owner of Grano Trattoria in the West Village, focuses on Southern Italian specialties at this 50-seat restaurant. The toque imports all his pastas and cheeses from Naples and works them into regional dishes like paccheri (a tubular pasta) with beef ragu and grilled scamorza (a stretchy fresh cheese) with a frisée salad.
