Charles Milite, owner of Union Square's Coffee Shop, revamps Chelsea institution Empire Diner with a brand-new menu, a big-time renovation and a revved-up bar program. He preserved the original's iconic elements—the chrome exterior, swivel barstools and vintage aluminum sconces—but refreshed the interior with mahogany and a geometric-patterned marble floor. Chef Jeremie Tomczak (Aquavit) presides over an expansive diner menu served morning through night. He gives coffeeshop standards a fine-dining tweak: Omelettes are made with crème fraîche, paddlefish roe and chives; mac and cheese is served with mustard greens and sherry; and the BLT holds lamb bacon and butter lettuce. To drink, find six beers on tap, such as Keegan Ale Stout or Defiant Tripel, and classic American cocktails, including the Rob Roy, the Gin Sling and martinis.
