Vatan’s spacious, elegant dining room is punctuated by elevated, pillow–strewn alcoves, where patrons sit cross-legged and feel like the royalty pictured in Moghul miniature paintings. The appetizer alone consists of close to ten tasting portions of all-vegetarian Gujarati dishes like mini samosas, deep-fried hot peppers, spinach with corn and channa masala. The main course is even more lavish, with puri, spiced cauliflower, rice pudding and khadhi soup, among many other delights. The only choices you have to make are what to drink and whether or not to have a gratis second helping of whatever your heart desires—the royal treatment indeed.
