Owner Cory McPherson (the Fitzpatrick) called upon his father, a South Carolina carpenter, to build out the corner space in Williamsburg that now houses his retro burger shop. You’ll see Pop’s handiwork in the aluminum-wrapped, ’50s-inspired counters, wainscoted walls and butcher-block two-tops at which the junior McPherson plans to toss tableside Caesar salads. That flourish notwithstanding, he intends to keep the namesake sandwiches simple: Expect Washington State beef, small-producer cheeses, Jersey tomatoes and applewood smoked bacon sourced from a local butcher. In a nod to neighboring Greenpoint, pierogi will share space on the chalkboard menu, along with
house-cut fries and onion rings.
