Food & Drink Award winner Jason Wang brings his Chinese chainlet to Morningside Heights, with this sixth outpost. Like its sister locations, this 17-seat spot showcases the mouth-tingling cuisine of Xi'an—once the starting point of the Silk Road—with a short menu of hand-pulled noodles and cumin-spiced lamb burgers. Chow down at a wooden counter as a high-def TV plays clips of Wang and his dad making noodles.

The first time I visited here I dined-in and had a delicious Spicy Cumin Lamb dish, but it wasn't heated quite all the way through so some of the noodles were a little gummy and unimpressive. There was really no excuse for it as it was an off-time and it wasn't packed, so they could've taken the time to heat it through. However, the 2nd time I visited (and got takeout) I had the Spicy Tingly Beef, and fell completely. in. love. The level of spice, the actual heat of the dish itself, the balance of flavors, and the beef was SO tender that it practically disintegrated in my mouth. I can now say I officially have a go-to dish at this place! And maybe I'll do takeout from now on...the banging noodles in the background of my dine-in experience was a bit loud/distracting (but I totally appreciate the whole craft of hand-pulling!)
