Drinking is a true art – or so it is, over at Astor Bar. There’s a charm to this bar that’s housed at The St. Regis Singapore. Besides paying heed to its true-blue American heritage, with all cocktails infused with a heady appreciation of New York, and Pablo Picasso lithographs lining the walls, it also presents itself with elegance. Happening every Saturday of the month, head over to Astor Bar between 12 to 2pm for the adults-only cocktail brunch.
It’s certainly caught our eye, not only for its free-flow signature cocktails, but also its lavish five-course brunch menu. Start with a quintessential American classic: a seafood platter on ice, with Alaskan king crab legs, freshly-shucked oysters, and shrimps. It’s all the more impressive when it comes alongside delish starters like crab cakes and tuna tartare. Eggs are paramount for any quality brunch, and it’s no different at Astor Bar. Here, choose from a range of egg specialty dishes: poached, scrambled, 64 degree soft-boiled, or even an egg cocotte.
You also have a choice of mains, with the likes of a Boston lobster roll or the classic St. Regis beef burger that comes with a slab of foie gras. There’s also a roving dessert trolley filled with a variety of cakes and tarts brought tableside, for you to select after you’ve had your fill of savoury bites.
The cocktails are also a main draw of this boozy brunch. The lineup is undeniably attractive, with post-prohibition drinks like the Red Snapper – the original Bloody Mary that was perfected by St. Regis New York in the 30s. Other must-try cocktails include Tong Wars, a refreshingly spicy concoction made from Chinese plum vodka, or the strawberry gin-based Hever Castle In New York.
