Just what is it with the Gwee brothers and their fascination with pop-ups? After finally settling into their permanent dig at Windowsill in the Woods in the hip Jalan Besar area, the once-wandering pie experts revisit their culinary roots with this pop-up restaurant at the back of Windowsill that changes its theme (and menu) every two weeks. Fortnight was already into its third theme – salads and greens – when we dropped by, but instead of boring old veggies, what we got were innovative and whimsical creations like the liquid salad, a play on the classic Caesar's ($13) that you suck out of a straw, and the duck rillete and gherkins ($15), a moreish spread mixed with citrus fruits and served with baguette, rye and sourdough. Next up: seafood, so look out for more wacky experiments, including a seafood offal basket and a monkfish fillet burger. And with 35 themes (they mentioned a nose-to-tail concept and bacon) in the works, the Gwees have got it almost covered for the rest of 2013.
