Served piping hot, the succulent meat comes out in an earthen clay pot with heaps of sliced ginger and spring onions in a thick, fragrant pool of dark soysauce gravy – blistering dried chillis are optional. This utterly addictive brew is best slurped down with silky smooth congee and a plate of shallot-topped chye sim on the side. Wash it all down with a glass of iced herbal tea.
