Yet another steakhouse in Singapore is nothing to write home about, until you learn that the eclectic Hippopotamus Grill at Marina Square is part of the fortysomething Parisian chain that glorifies affordable, prime cuts of steak. The winning formula here is no less different: USDA or Australian grilled steaks come in prime rib, sirloin T-bone or tenderloin, or as a starter in carpaccio or tartare. Accompaniments are as French as it’s possible to be, with béarnaise, stewed shallot and/or roquefort as rich sauces, and potato gratin, haricots verts and ratatouille for sides.
