Helios, Nanos and Chromos are not terms you’d ever link with five-star-fare, but one formula that passes the litmus test is Infuzi, simmering away in the scientific environs of Biopolis. Serving modern European cuisine with a dash of something special, chef Freddie Lee and his team have been quietly perfecting their menu since the restaurant’s inception in 2004. The result is a collection of seasonal, handcrafted dishes that are a joy to behold as well as to indulge in. The pan-fried duck liver with a balsamic reduction, served with roasted pear, may no longer be on the menu and the Maine lobster pasta may be out of season, but the ever-changing menu is sure to replace it with something equally delicious. The wine selection flows freely from the cellar, befitting the restaurant’s European influences; you can also bring your own favourite vintages to the table (corkage applies).
