Peach Garden – the restaurant chain best known for its Cantonese cuisine and, in particular, its roasted slices of crisp suckling pig – has done it again. Its fifth instalment in the Lion City, Peach Garden Sichuan, is squirreled away on the third storey of the worn-down Miramar Hotel. But if the building has clearly seen better days, this new restaurant is all glitzy glass chandeliers and thick carpets in a spacious, darkwood-colonnaded dining room framed by peach tree-imprinted screens.

But don’t arrive expecting tongue-numbing and lip-scorching Chengdu- or Chongqing-style dishes drowned in chilli oil, chillis and peppercorn. While the dishes here are prepared with finesse, the spice level has been toned down to cater to the Singaporean palate without compromising on taste.

The classic Sichuan dish of stir-fried French beans with spring onions, sautéed garlic and minced pork, for instance, was unrivalled for its combination of crisp textures and salty/spicy flavours, while the dan dan noodles, topped with tender slices of beef basking in a gravy and coated with chilli oil, were the best we’ve had in a while. Even the wok-tossed sliced pork belly hit the sweet spot with a mélange of capsicum, leek and spring onions in a warming Sichuan paste.

Particularly welcome was the rarely-seen, water-boiled sliced fish in Sichuan sauce, a dish where slivers of silver perch are, in fact, boiled in oil, then served in a bowl of aromatic chilli oil, peppercorn, dried chillis, spring onions and beansprouts: wonderfully flavoured, but perhaps not the healthiest way to treat your arteries. Those with a low tolerance for spice shouldn’t miss the outstanding camphor- and-tea-smoked duck which, on our visit, sported a fragrant, smoky tang.

Equally good is the value-for-money lunch, which includes a dim sum trolley, à la carte buffet, and buffet line filled with both Sichuan and Cantonese fare for $33.80 per head on Saturdays, Sundays and public holidays. This should keep both the spicy crowd and more conservative diners satisfied. If you have Sichuan friends who are missing their province’s cuisine, this is one of your best bets. Eve C
