You’ve gotta love Changi for its incredible spread of eateries. The next time you’re done checking in and before passing through immigration, head to the third level of Terminal 2 for a meal at Soup Restaurant. Fortify the defences with the ginseng and pork soups; then tackle the famed Samsui ginger chicken: tender boiled poultry wrapped in lettuce leaves and doused with a slash of garlic-ginger sauce. The Beggar Bowl tofu (think mapo tofu without the heat and mince), and fried sweet potato leaves are always reliable favourites.
