Pull up a chair by the three-tiered swimming pool looking out onto the calm, cerulean South China Sea, or settle into the sturdy chairs within the dimly lit indoor coves of this tucked-away restaurant; it doesn’t matter. The real dilemma comes with afternoon tea: which of the four distinct triple-tiered tea sets and 30 Gryphon tea blends should you sample? Our greedy tastebuds liked the buttery scones with clotted cream (Queen’s set), the intense but well-balanced green tea and raspberry profiteroles (Japanese set); and smooth tomato-and-goat-cheese ‘bon bon’ (Neo-Class set). The St Tropez – white tea with yuzu, rose and ylang – was a pleasant, subtle blend.
