After shuttering his delightfully French Rendezvous Hotel bistro at the start of the year, chef-owner Jean-Charles Dubois moves up the hill to set up shop at the newly opened Fort Canning Arts Centre. Balzac Brasserie, which is slated to open this month, keeps the menu classically French. It retains signatures like his rich lobster bisque and wagyu beef cheeks while adding new, modern dishes, cooked up in his new open kitchen, which looks out to an antique zinc bar and the restaurant's dining room.
